PANEER AND CHEESE VEG KETO CUTLET

Keto veg airfryer

Ingredients
2 cups of grated paneer (Cottage Cheese)
1 cup of grated pizza cheese
1 finely chopped onion
1/2 tsp garlic powder
1/2 tsp chat masala
1/2 tsp salt
1/2 tsp origano seasoning
1 tsp butter or ghee

Method
Mix all the ingredients in a bowl and make small cutlets of any shape you want, place them in airfryer and airfry at 180 degrees for 10 minutes. Serve hot with sauce and chutney
This receipe is high in protein and fat which makes it Keto friendly. Enjoy!!


CRISPY POTATO CHEESE BALLS



Ingredients
2-3 Boiled mashed potato
Chopped capsicum, coriander leaves and green chilli 
1tbsp ginger garlic paste
3tbsp of corn flour 
3tbsp of flour (maida)
Seasoning (salt, oregano and red chilli flakes to taste)
1 cup of bread crumbs 
Small cube size cheese pieces


PROCEDURE
In A Bowl, Mash all the boiled potatoes, add chopped capsicum, coriander leaves and green chilli, garlic paste, 2 tbsp flour and 1 tbsp corn flour, seasoning. Mix and make small balls.
Take small cheese cubes and press them inside these balls and give it a round shape. 

Now prepare a batter with 1 tbsp all purpose flour and 1tbsp corn and 1/2 cup of water. dip the balls in this batter and then roll them over bread crumbs, keep these balls in the refrigerator for 30 minutes before cooking. 

Now airfry these balls for 10-15 minutes at 200 degree. Serve Hot with  Chutney and Tomato Sauce!!


Banana Chips in Airfryer

INGREDIENTS
Four bananas (raw)
Black pepper
Salt
little oil for airfryer

Procedure: Peel the Banana and slice them in the form of thin chips, and take mix the chips with a little bit of oil (Optional), transfer the content to a airfryer and airfry for 10 minutes at 180 degree. Once done, sprinkle salt and pepper to taste. Store them in a Jar and serve as a snack.

-Boiled Rice - 1 Cup
- Paneer - 1 Cup ( Grated )
- Carrot - 2 Spoon ( Grated )
- Sweet Corn - 2 Spoon
- Mozzarella Cheese Cubes ( Small )
- Green Chilly - 1 ( Finely Chopped )
- Corn Flour - 1 Spoon
- Corn Flour Slurry ( 1 Spoon Corn Flour in 4 Spoon Water )
- Bread Crumbs
- Garlic Powder ( Optional )
- Oregano or Italian Seasoning
- Salt To Taste
PROCEDURE
For Outer Layer:In A Bowl , Take Rice add Paneer , Seasoning , Salt and Corn Flour and Mash It and Prepare a Dough
For Stuffing : Take Carrot , add Cheese Cubes , Sweet Corn and Chilly and Mix It
For Preparing Balls : Stuff the Stuffing in the Dough and Make Balls of it, Dip the balls in the Corn Slurry,Then Roll the Balls over Bread Crumbs and airfry for 10-15 minutes at 200 degree. Server Hot with  Chutney and Tomato Sauce!!

Cheese Paneer Balls


Ingredients:

Paneer/Indian cottage cheese (grated)-200 gm
Cheese (cut into small cubes)-50 gm
Gram flour-2 tbsp
Corn flour-1 tbsp
Finely chopped onion-2
Finely chopped green chilli-1
Finely chopped ginger-1 inch
Red chilli powder-1/3 tsp
Chopped coriander leaves
Cooking oil for fry
Salt to taste
Method:
Mix all the ingredients into the paneer except cheese and oil, mix it properly.Take a small portion of mixture, roll it and press it on your palm like tikki(make it flat). Stuff one cheese cube inside, seal the edges and make a ball by rolling it on your palm. Repeat the same process to make balls from remaining mixture.
Airfry the balls for 10-15 minutes at 200 degrees. Serve hot with tomato ketchup and green chutney.

Take maida add oil and salt knead it with water and make it a dough, keep it aside for 15-20 minutes

Filling : boil matar till it get soft, strain it and cool it down, make sure water should not be there in matar. Cut green coriander, green chilli's, Add crushed matar with salt, garam masala,roasted jeera and chat masala or amchoor,

Now take a small ball of maida and with the help of hands make a katori add filling and close it properly. Now airfry for 10-15 minutes  Serve hot !!

Method 

For Parcel : Mix 1 cup flour,  salt and water to make dough. Apply little oil and & keep aside 

For Filling : Boil pasta with some salt one table spoon oil. when cooked filter the excess water. Saute chopped garlic, green chilly, onions, add grama masala, tomatoes paste and salt. Finally add pasta and cook with a covered lid on low flame.

Finally make small ball of the dough roll them into circle with a rolling pin. Fill the pasta filling and fold them as shown in pic. Seal the edge using water. Airfry them for 200 degree for 15 minutes till golden brown. Serve hot with Sauce!!

Mix half cup each of milk powder , maida, milk and 1 table spoon baking powder to make dough. and make small balls. 

Airfry the balls for 5 minutes at 180 degree and then 10 more minutes at 200 degrees. they will become golden brown.

For Sugar syrup: Boil two cups of water and mix 1 cup sugar, when it starts boiling put the flame off. Now transfer the golder fried balls to this syrup. Syrup should be luke warm. 

Now serve them hot and enjoy your oil free Gulab Jamun

Ingredients:

Chic peas (Kabli chana) 1 bowl, Onion, garlic, coriander leaves, salt, garam masala, baking powder

Method:

Soak one bowl of chic peas for 12 hrs, now in a food processor add all ingredients and make a granular paste. Make small tikkis by rolling these tikkis with a bit of oil in your palms, transfer these tikkis into the airfryer, airfry at 200 degree C for 15 minutes, serve hot with any chutney.

Ingredients

BATI : Wheat flour, ajwain, refined oil, salt, ghee

For Stuffing : Roasted gram flour, green chillies, chopped dhaniya leaves, roasted jeera, chopped garlic, amchur, mango pickle masala, lemon juice, chopped onions,mustard oil, salt to taste

For Chokha : Boiled potatoes, chopped (tomatoes, green chillies, onions,dhania) salt to taste

For Chutney : Garlic , tomato, onion, red chilli, mustard seeds and Ghee

Method :

Sieve the flour and add salt, ajwain, kalonji,refined oil, Knead the dough properly with water and make a stiff dough. Keep the dough aside for 20 minutes

For stuffing : Mix sattu and all the ingredients in a bowl, you could sprinkle some water to ensure that the stuffing is not too dry, nor too soft.

For litti : Make 6 to7 equal sized balls from the dough and fill a portion of the stuffing and close the balls by lifting the sides by hand and flatten the litti a bit by pressing your palm. Brush them with little oil and airfry for 15 minutes at 200 degree until golden brown

For chokha : Mix Boiled potatoes and tomatoes, Add finely chopped onion,coriander leaves,salt,green chillies and oil. Add all the ingredients. Chokha is ready

For Chutney : Grind all ingredients except ghee and mustard seeds. and then saute the paste in Ghee and and mustard.

Serving hot with Chutney

Ingredients

Spinach leaves 300 gms, Bread crums, Grated Mozzarella cheese , Red chilly flakes, Fine chopped onion, Corn flour, Grated garlic, salt and oil for brushing

Instructions

1. Make spinach puree by making a paste of boiled spinach leaves,  and mix it with  bread crumbs, bread crumbs, grated mozarella, corn flour, garlic and some salt and roll them into small balls.

2. For the cheese fillings, mix cheese, chilly flakes and fine chopped onions and roll them into small balls, place them inside the spinach bills such that the spinach balls cover the cheese balls evenly from all sides. roll the ball and keep it aside.

3. Brush them with oil and air fry at 200 degrees in the air fryer for 10-15 minutes . Serve them hot and crisp with red tomato sauce.

I have used ready made mc cains french fries and air fried it for 15 minutes at 200 degree Centigrades

for veg balls: finely chop all vegetables (cabbage, carrot, capsicum, onions) , add two table spoon corn starch, two table spoon all purpose maida, half tsp black pepper, half tsp salt, and mix in a bowl. Make small balls using the palms of your hand. Airfry for 15 minutes @ 200 degree.

for Manchurian sauce: on a low flame stir and saute in sesame oil the finely chopped garlic, ginger, green chilies, onions, Add soy sauce, tomato sauce, red chili sauce, one forth tsp corn starch, black pepper, vinegar and salt as required. then add the airfried veg balls. stir so that the sauce coats the veg balls evenly. switch off the flame and add half tsp rice vinegar or regular white vinegar. serve hot after garnishing with spring onion greens.









CRISPY HEALTHY VEG ROLLS

INGREDIENTS :-
For Dough : Maida - 2 cups, Baking Powder, Salt & Oregano, Oil - 1 tsp
For Filling : Peas, Potato, Capsicum, Carrot, Coriander, Butter, Sweet Corn,Beans, Cabbage,Onion, Ginger Garlic Paste, Chilly Powder, Chat Masala powder, salt to taste.)
Corn Flour coating - Two teaspoon Corn Starch in half cup water and Bread Crums

PROCEDURE :-
STEP 1 - Make a Soft Dough and keep it aside for two Hours
STEP 2 - For the filling : On a Frying Pan add one spoon butter , 1/2 Spoon Ginger Garlic Paste and ,Onions. After 1 minute add rest of the Vegetables and half cup water, Cover it with a Lid and Cook it Properly. Add all Masala, Coriander and mix it well till it's dry and there is no water. 
STEP 3 - Cut square shape roti and add the filling and roll it as shown in the picture below
STEP 4 - Roll in Corn Slurry and Coat with Bread Crum as shown in picture below
STEP 5 - Airfry for 15 minutes @ 200 degree. Until golden brown. Serve hot with green chutney or ketchup.






OIL FREE ONION PAKODAS

  1. Besan -  1 cup
  2. Sliced onions
  3.  coriander powder
  4. Ajwain
  5. Roasted jeera powder
  6. Salt to taste
  7. Methi
     Method:
  1. Mix all ingredients in a large bawl with few tea spoons of water and make small sized pakoda with a little bit of oil applied on your palms. For more crispness make sure you do not make them too wet.
  2. Preheat the air fryer at 200 degree.
  3. Place the pakodas on the small sheets of oiled aluminium foil (see picture below) and airfry for 5 minutes. After this give it a shake and keep for 5 more minutes, until all sides are golden brown.
  4. Serve hot with green chutney or ketchup.


 



OIL FREE CHEESELINGS

Ingredients:

1 cup of - All-purpose flour
Baking powder - 1 tea spoon
Chilli powder - one forth of a tea spoon
Butter – one tea spoon
Grated Cheese – 2-3 small cubes
Salt to taste

Method:

1. Mix all-purpose flour, baking powder, salt, chilli powder, butter, grated cheese and few drops of water in the flour mixture and make stiff dough.

2. Just knead the dough for a while. Sprinkle some flour on the table and with help of a rolling pin, roll the dough into a thin sheet and cut them into desired shapes.

3. Preheat the Philips airfryer at 180 degree for 3 mins and drop in the Cheese lings and air fry them for five minutes. After 2 minutes, pull out the basket; toss them and air-fry again for about 2-3 minutes.

4. Remove and serve hot with sauce.

INGREDIENTS
  • ·         5-6 slices of bread (wheat or brown or multi grain bread)
  • ·         2 medium sized potatoes
  • ·         ½ tsp dry pomegranate seeds or ½ tsp dry mango powder
  • ·         ½ tsp crushed black pepper or ¼ tsp black pepper powder
  • ·         ¼ tsp red chilli powder
  • ·         1 green chilli, chopped
  • ·         ¼ tsp garam masala powder
  • ·         ¼ tsp cumin powder
  • ·         ½ tsp chaat masala
  • ·         2 to 3 tsp chopped coriander leaves
  • ·         salt as required



INSTRUCTIONS
  • Boil > peel > mash the potatoes and add crush the dry pomegranate seeds to a powder in a mortar-pestle. Add the pomengranate powder, crushed black pepper, red chili powder, chopped green chilies, coriander leaves, garam masala powder, cumin powder and chaat masala powder and salt. Mix the whole filling well.
  • Make small to medium rolls of the filling depending on the size of the bread and how many you are going to use. taste and add more salt or spice powders if required.
  • Take a slice of bread and dampen it with water,squeeze the water from the bread.place the filling in the center of the bread.roll the bread and close the edges so as to get an even outer cover.make all bread rolls this way and keep aside
  •  Pre heat the Airfryer at 200oC. Brush the rolls with oil and air fry at 200oC for 10 minutes or till slightly golden brown. Bread roll is ready. serve the bread rolls with tomato sauce or green chutney.

Ingredients
  • Chana dal 1/2 cup
  • Rice flour 1 teaspoon
  • Onion 1
  • Ginger small piece
  • Green chilies 2-3
  • Curry, coriander, dill, methi and pudina / mint leaves - total half-bunch
  • Cooking soda 1 pinch (optional)
  • Oil for Brushing
  • Salt to taste

Method
1. Wash chana dal. Soak it in 1/2 a cup of water for 1 hour. Drain the water to a bowl. Use this water for grinding, if required. Keep aside for 20-30 minutes.       
2. Chop the onion, one chili and the green leaves.  Add chana dal to a mixer jar. Add half a table spoon of onion pieces, 2 chillies, ginger, and salt. Grind the items into a coarse paste. If you are unable to grind, add little water, which you had used to soak the chana dal, to the jar. Grind again. If there is chana dal, which is not ground, press them with your fingers or leave them as is. Transfer to a bowl.        Add chopped onions, chili, green leaves, rice flour, soda and salt to the ground mixture. Mix. The masala vada mixture is ready.           
3.  Make balls, which are about double the size of a lemon, if you wish to make bigger-size or fewer vadas. Flatten one vada ball on your palm or a plastic paper, and place in air fryer, brush gently with oil
4. Pre heat the Airfryer at 200oC. Brush the Tikkis with oil and air fry at 200oC for 10 minutes or till slightly golden brown.  masala vada / chana dal vada is ready. Serve with  pudina chutney and or tomato sauce.

Ingredients

  • 1 cup mixed vegetables, chopped (I have used carrots, french beans, green peas)
  • 1/2 cup paneer
  • 2 medium boiled mashed potatoes
  • 3 green chillies
  • 1 inch ginger
  • 3-4 garlic cloves
  • 1/4 cup fresh mint leaves
  • 2 tbsp corn flour
  • 1/2 tsp garam masala powder
  • Salt to taste
  • 1 tbsp chaat masala
  • Oil for brushing
  • 12-14 bamboo skewers









Method

Step 1 Place the chopped vegetables, ginger, garlic, green chillies, mint leaves and paneer in a food processor and mince them. you may grate the carrot, finely chop the french beans and coarsely grind the green peas.

Step 2 In a large mixing bowl, add minced vegetables, mashed potatoes, garam masala powder, salt and cornflour. Mix well.

Step 3 Once the kebab mixture is ready, divide equally into lemon sized balls (approximately 12 to 14 ). Wet your palms and shape each of them around individual bamboo skewers. Ensure that you press the ends firmly, so that they don't fall apart. Remember to soak the bamboo skewers in water for at least 2-3 hours before using them or they will tend to burn.

Step 4 Pre heat the Airfryer at 200oC. Brush the Tikkis with oil and air fry at 180oC for 10 minutes or till slightly golden brown on the outside.

Serve hot along with freshly made salad and green coriander chutney or ketchup.

Notes:

  • Before you mince the vegetables ensure they are completely dry. After washing vegetables, pat dry them using a vegetable towel.
  • Ensure that the potatoes are well mashed and there are absolutely no lumps as these would make the kebab fall apart.
  • Before you start frying the kebab please test one first to ensure that the binding is right and the kebab does not fall apart. If required add one tbsp of corn flour.
  • Add chaat masala as soon as you remove the kebab from the pan as they are hot and can absorb the flavour well.
